家常鸡肉饼 HOMEMADE CHICKEN MEATLOAF

材料
鸡胸肉200克、鸡腿肉600克、鲜香菇10朵
调味料
蛋白1粒、酱青1汤匙、盐1茶匙、糖½茶匙、清水50毫升
泡菜料
红与紫萝卜各100克、白醋25克、糖15克、盐¼汤匙
做法
1 将鸡肉搅碎,加入所有调味料捞匀备用。(图1-2)
2 平底锅热少许油,把香菇煎片刻,捞起备用。(图3)
3 将鸡肉铺入烤盘内,中间酿入香菇,压平。(图4-5)
4 将烤盘放入预热至180℃的烤炉内烤45分钟,切片摆盘。
5 泡菜做法:将红及紫萝卜切长薄片,加入白醋、糖与盐腌
拌均匀, 配鸡肉饼享用。(图7)

INGREDIENTS
200chicken breast meat, 600g chicken leg meat, 10pcs shiitake mushroom
SEASONING
1 egg white, 1 tbsp soya sauce, 1 tsp salt, ½ tsp sugar, 50ml water
PICKLE INGREDIENTS
100g red and purple carrot, 25g white vinegar, 15g sugar, ¼ tbsp salt
METHOD
1 Mince the chicken meat, mix with all seasoning. (pic 1-2)
2 Heat oil in frying pan, sear mushroom briefly and set aside. (pic 3)
3 Spoon half portion of the chicken mince meat into loaf pan, lay in mushrooms, top with mince meat, press tightly. (pic 4-5)
4 Place the loaf into 180℃ preheated oven, bake for 45minutes till cooked. Sliced and serve. (pic 4-6)
5 To prepare pickle: Sliced red and purple carrot in long strips, mix with vinegar and sugar, serve with meat loat. (pic 7)
